Fruity Tutti Pikelets

Free from allergens: Wheat, Cows Milk, Peanuts and Tree nuts, and Soy


  • ½ cup Rice Flour
  • ½ tsp Baking Soda
  • ½ Cream of Tartar
  • 1 tsp Golden or Maple Syrup
  • Pinch of salt
  • ½ cup dry Brown Rice (ground)
  • ½ pureed Peach or Banana
  • 90 ml Vanilla Rice Milk
  • 5 scoops Neocate*
  • 1 tbsp. Vegetable Oil

*Always use the scoop provided in the Neocate tin.


  • In a medium bowl, combine the rice flour, baking soda, cream of tartar, syrup and salt
  • Grind the brown rice in a food processor or blender and stir into the other dry ingredients
  • Puree the peach or the banana, and stir into the mixture
  • In a separate container (with a lid), combine the rice milk, Neocate and oil
  • Replace the lid on this container and shake well
  • Pour liquid mixture into the dry ingredients and mix just until combined, do not beat or over mix
  • Oil and preheat a non-stick pan
  • Spoon ¼ cup of the batter onto the hot pan. Cook until bubbles start to appear on the top and the edges are brown
  • Turn and cook until light brown
  • Serve immediately


  • Can be stored in a refrigerator for up to 24 hours.
  • Freeze pikelets for quick lunchbox snacks
  • Serve warm with custard/syrup for dessert
